Acidity
The sensation of dryness created under your tongue and the back of your palate. Acidity provides a sharp, vibrant quality. Without it, coffee would taste flat.
Body
Represents the physical feeling the coffee has in your mouth; thickness, richness, and viscosity felt by your tongue. Coffees with a fuller body will feel heavier on your tongue, while brews with a very light body will feel more akin to water.
Flavor
Describes the overall taste of the coffee, the combination of acidity, aroma and body. Most coffees are described by flavor. Common words to describe flavors are: Richness (a full-bodied brew), Complexity (the presence of multiple characteristics) and Balanced (where no one characteristic over powers another).
